3 Delicious Toast Combos for Peak Summer

Get the most out of peak summer fruit this season with three delicious toast combos including ricotta peach, chocolate cherry, and a strawberry basil twist on the classic avocado toast. Perfect for breakfast or snacking!

It’s hard to beat peak summer produce - there’s so much variety of fruit and veggies in season, and they’re all practically bursting with flavor! In particular, farmer's market berries and stone fruit seem to be 1000x juicier and more flavorful than their grocery store counterparts. And there are endless ways to eat them, but perhaps the easiest of all (aside from eating them raw) is on toast! 

Toasts take just a few minutes to assemble and with the right flavor combos, they make incredibly delicious (and speedy!) breakfasts and snacks! Plus it’s also easy to sneak in some extra nutrients into them - use sprouted bread and top your toasts with a sprinkling of hemp and/or chia seeds for a boost of healthy fatty acids (omega-3 and omega-6), fiber, and protein (more on that here!). 

Here are three delicious toast combos to help you take advantage of peak summer fruit! 

1. Ricotta Peach Toast

Ricotta Peach Toast = almond ricotta + sliced peaches + Just Date syrup + hemp seeds

I’ve been eating this toast combo almost every day non-stop for a week now - it’s THAT good. It just tastes like peaches and cream...but on toast! 

Creamy almond ricotta with juicy peaches is a magical duo, especially when topping it off with a drizzle of date syrup! Date syrup is made with dates (so it’s free of any refined sugars!), and it adds some caramel-y sweetness that (dare I say it?) makes juicy peaches even more delicious. 🤤 (Plus it contains some of the nutrients found in dates, like potassium, magnesium, and antioxidants!)

I really love the date syrup from Just Date because it’s made with a single ingredient - organic dates! If your local grocery store doesn’t stock it, you can find it nationwide at Whole Foods or you can order it online and use my affiliate code “TEO10” to get 10% off your orders!

For this toast, I used a homemade almond ricotta (recipe below), but any store bought almond ricottas (like Kite Hill) would also be great! 

My go-to easy homemade almond ricotta: 

Ingredients

  • 2 cups blanched slivered almonds 

  • ¾ cup + 2 tablespoons water

  • 3 tablespoons lemon juice

  • 2 teaspoons nutritional yeast

  • ¼ teaspoon sea salt

Directions

  1. Combine all the ingredients in a high-powered blender (like a Vitamix).

  2. Blend on medium speed for ~10 seconds to begin incorporating all the ingredients, then blend on high until the mixture turns smooth and creamy, using a tamper to keep the mixture moving and/or pausing/scraping down the sides as needed.

  3. Use immediately or transfer to an airtight container to refrigerate for later use (keeps about 4-5 days). Note: the texture of the ricotta will thicken once refrigerated.

2. Strawberry Basil Avocado Toast

Strawberry Basil Avocado Toast = mashed avocado + diced strawberries + chopped basil + hemp seeds

Have you ever paired avocados and fruit together? I love how strawberries add a summery twist to the classic avocado toast, which is made even better with some fresh basil and a sprinkling of hemp seeds! 

For a sweet and salty combo, try topping everything off with sprinkle of flaky sea salt! 

3. Cherry Chocolate Toast

Cherry Chocolate Toast = chocolate hazelnut butter (vegan Nutella) + sweet cherries + cacao nibs + hemp seeds + chia seeds

Pairing sweet cherries with chocolate is a no-brainer. So perhaps it’s not shocking that combining them with chocolate hazelnut butter and cacao nibs makes a delicious toast! Cacao nibs add crunch and some bitterness to counterbalance the sweetness from the cherries and chocolate hazelnut (vegan Nutella) spread. Top everything off with a sprinkling of hemp and chia seeds for a little nutrition boost! 

You can use your favorite store bought chocolate hazelnut spread (check the ingredients to make sure it’s vegan!) or try making your own - here’s my recipe)! And by the way, this combo is just as (or even more?) delicious stuffed into a crepe. 🤩

For a different but still super tasty toast combo, try subbing almond butter in for the vegan Nutella!
