Raspberry Chocolate Nutella Overnight Oats

Wake up to the perfect breakfast with these delicious raspberry chocolate “Nutella” overnight oats! Super tasty & made with 7 different plant foods to fuel your gut with nutrients, fiber, and protein! Plus, they’re completely naturally-sweetened using Medjool dates and raspberries.

Overnight oats are one of the most versatile breakfast options, and I love incorporating in-season ingredients into them for practically endless flavor combos! With the end of summer just around the corner, I’m clinging on to the last of this season’s local raspberries, which I paired with my homemade chocolate hazelnut butter and cacao to create the perfect end-of-summer chocolate-y breakfast!

Why You’ll Love These Overnight Oats

These overnight oats are a delicious breakfast, thanks to the pairing of raspberries, chocolate, and vegan Nutella! Raspberries are one of my favorite fruits to pair with my homemade Nutella, and cacao adds chocolate-y notes and extra richness to create a tasty and well-balanced oatmeal combo

Although these oats taste indulgent, they’re completely naturally-sweetened with Medjool dates (by blending them with milk)! They’re slightly sweet, but not overwhelmingly so - just enough to balance out the bitterness from the cacao. And raspberries throughout add in some extra sweetness as well.

They’re also packed with fiber, protein, and all the nutrients contained in 7 different plant foods - oats, cacao powder, flax seeds, raspberries, dates & hazelnuts (from my vegan Nutella) in the base, plus cacao nibs and hemp seeds sprinkled on top! Diversity of plants is the single most important predictor to fuel a healthy gut,  with a recommended target of 30-40+ different plants in a single week. Kicking off the day with 7 different plants in a single breakfast sets you on track to meet that goal! 

These oats also sneak in lots of extra nutrition through those ground flax seeds - a single tablespoon of ground flax contains 1.8 grams of essential omega-3 fatty acids (the good fats!), which means these oats fulfill your daily recommended intake of omega-3s! Some extra hemp seeds to top pack in an extra punch of protein and fiber, too - because who can’t use more fiber in their diet?!

Overnight oats are probably also the most convenient breakfast - ever. Since they’re prepped the night before, breakfast takes literally 30 seconds to assemble the next morning - just grab them from the fridge, sprinkle on some toppings, and eat! This makes them the ideal breakfast for mornings when you don’t want to cook or need a to-go breakfast option (already pre-packed in a jar!). 

On busy days, I find that there’s nothing quite like waking up to a nutritious, flavor-packed breakfast awaiting me in the fridge! Especially when that breakfast involves raspberries, chocolate, and Nutella. 😉

Raspberry Chocolate Nutella Overnight Oats

Vegan, naturally-sweetened, gluten-free
Makes 1 serving

Ingredients

Overnight Oat Base:

Toppings (optional):

  • More fresh raspberries

  • Cacao nibs

  • Hemp seeds

  • Extra drizzle of Nutella

Directions

  1. In a sealable jar or container, combine the rolled oats, cacao powder, and ground flax and mix together. 

  2. In a blender, add the non-dairy milk, date, and Nutella and blend on high until combined (about 30-45 seconds). Pour the blended mixture over the oats and stir to combine. 

  3. Add in the fresh raspberries and stir to incorporate. Seal the jar/container and refrigerate overnight, or for at least 8 hours. 

  4. In the morning, remove the oats from the fridge and stir. If they’ve thickened up a bit too much for your liking, stir in a splash of non-dairy milk until you reach your desired consistency. Top with any desired toppings (I always love some extra raspberries, cacao nibs for some crunch and extra chocolatey-ness, and hemp seeds for extra omega-3s). Enjoy!
