What to Expect from Vegucated Eats

Welcome to Vegucated Eats, a resource for incorporating more plant foods into everyday life! I’m here to show you how easy it is to turn plant ingredients - veggies, legumes, grains, nuts, seeds, etc. - into banging meals you’ll be craving to eat! 

I learned how to eat while transitioning to a vegan diet. It sounds so basic, doesn’t it? But so many of us never learned how to use vegetables creatively (steamed broccoli anyone?). Or what to look out for while grocery shopping. Or even how to buy basic groceries that go beyond mixed greens and pre-made foods. We’re all still learning, but I’ll be sharing all the tips I picked up over the last few years that I wish someone would have taught me!

What to Expect from Vegucated Eats

Expect to find tips, guides, and resources on: 

1. How to eat (more) plants

At the core of everything I eat are plant ingredients, including vegetables, greens, grains, legumes, nuts, fruit, seeds, etc., which I use to create delicious dishes - dips, curries, soups, stews, bowls, tacos, toasts, pastas, etc. I’ll highlight individual ingredients and share ideas on how to transform them into what might become your next food obsession! 

2. Delicious Foods

Non-negotiable: food should taste good. (Duh.)

3. Accessible foods and recipes

Eating plant foods doesn’t mean eating a sad pile of leaves, but good food doesn’t have to be complicated either! I’ll share recipe roundups and guides on how to create simple and accessible meals.

4. Increase plant diversity in your diet

The most widespread advice on gut health states that we should aim to eat 30-40+ different plants in a week. (This study found that individuals who ate 30 different plant-based foods in a week had more diverse gut microbes.) I focus on switching up the ingredients I cook with every day to achieve that! I’ll share ways to increase the diversity of plants in your diet and easy ways to approach new foods.

5. Resources for living an active & healthy lifestyle

Outside of food, I’m passionate about staying active and moving every day! l’ll share some of my favorite resources on living a healthy and active lifestyle.

Going vegan has been transformative in the best possible way for me. I hope to inspire you to try new foods and start eating more plants!
